Delicious and easy Aloo Tuks | Crispy Fried Potatoes | Indian Potato Recipe
This tangy and delicious fried potato recipeis a Sindhi favourite and very simple to make.
To make this we’ll need baby potatoes.
You can use normal potato if you want as well.
To spice these up we’ll make a masala mix.
We’ll use coriander powder for some depth
chilli powder for spice and Amchoor for a yummytang
And off course some salt.
Start by par-boiling the potatoes till they’reabout 3/4th of the way cooked.
Par boiling simply means to cook part of theway.
This should take 7-10 minutes for baby potatoes.
Adding salt will help them cook faster andbecome flavourful.
You could even use a pressure cooker, whichwill require only 1 to 2 whistles.
Fish them out and let them cool down.
To turn the potatoes into tuks we’ll smashthem down using the flat side of a knife.
You can take the skin off if you like butwe think it add crispiness so we prefer to leave it on
Make sure you don’t press them too much.
They should still hold their shape.
Heat oil for deep frying.
Check if it’s hot by dropping a piece ofpotato to see if it sizzles.
Deep fry on high heat until your tuks arecooked through and a gorgeous golden brown.
This can take up to 10 to 12 minutes.
They’ll be hot when removed so give themat least 5 minutes before you dig in.
Now toss your tuks in the zingy spice mix.
Make sure you coat all of them properly.
You should adjust the spice level based onyour own tolerance and comfort.
